Butterflied Indian Roast Chicken

This is a roast chicken with a twist. Turn your plain old roast chicken into a taste sensation with this easy indian recipe. The flavors are subtle and delicate which makes for a beautiful moist chicken in only an hour.
Ingredients
  • 1.5kg (3lb) Free Range or Organic Chicken
  • 1 tblspn coconut oil
  • Juice of 1 small lemon
  • 1 tsp ground cardomom
  • 1 tspn garam marsala
  • 1 tspn fennel seeds
  • 3 cloves garlic, crushed
  • 1 tspn ground coriander
  • ¼ tspn chilli flakes
Instructions
  1. Heat oven to 180c or 350F
  2. Rinse chicken and pat dry with a paper towel
  3. Turn chicken breast side down & using kitchen scissors cut down each side of the backbone and remove
  4. Press chicken flat to butterfly
  5. Mix all other ingredients together in a bowl
  6. Rub the mixture over the chicken front and back
  7. Lightly oil a baking dish
  8. Place chicken in the dish & cook for 1 hour basting with the juices occasionally
  9. Cut into pieces
  10. Serve with favorite condiments
  11. You can also let the chicken marinate overnight if you have the time
