Rather than eating the sugar loaded cookies from the supermarket, make these easy, quick to make healthy Almond and Chocolate Chip Cookies instead! Swap out flour for Almond Meal and you have a cookie full of antioxidants, healthy fats, plus they are Gluten Free.
  • 2 Cups Almond Meal
  • Pinch of Himmy Salt
  • ¼ Cup Raw Organic Coconut Oil
  • 2 Tablespoons Organic Raw Honey or Organic Maple Syrup
  • ¼ Cup Cocao Nibs
  • Grease a cookie sheet/tray
  1. Preheat the oven to 350F or 180C
  2. Into a mixing bowl place Almond Meal, Salt, Oil and Honey or Syrup
  3. Mix until all the ingredients are well combined
  4. Add nibs and mix
  5. Take teaspoonfuls of the mixture and roll into small balls
  6. Place the balls onto the cookie sheet/tray
  7. Bake for 10 minutes, if they are brown they are done if not bake for a further 5 minutes
  8. Transfer to a rack to cool
  9. Enjoy with your favorite beverage
