Healthy Baby Spinach Salad With Goats Feta

It's Birthday week in my family this week. Mine earlier this week and my Mum's today. As I was planning the menu for lunch I remembered this quick and easy salad recipe from years ago that I use to whip up all the time. You'll find you friends will ask you to bring it along and ask for the recipe to make it themselves, it's that delicious as the flavors work really well together Enjoy!
  • Bag Baby Spinach Leaves
  • 125g (4oz) Goat's Feta
  • Can of Peas
  • Juice of 1 lemon
  • 2 Tblspns Cold Pressed Olive Oil
  • Himalayan Salt
  • Freshly Ground Pepper
  1. Wash and spin (dry) baby spinach
  2. Chop feta into small bite size pieces
  3. Open peas and drain them well
  4. Juice lemon
  5. Assemble the spinach, feta and peas into serving bowl and toss
  6. Place lemon juice, olive oil, salt and pepper into a jar and shake to blend
  7. Add dressing just before serving
  8. Enjoy!
