This recipe originated with me wanting to re-create an old favorite Cherry Ripe Slice recipe I use to make typically around Christmas. Wanting to avoid the condensed milk and all that sugar I searched for a similar healthy version and couldn't find one that I totally loved so I created my own version. I threw all sorts into the mix and I started with a nut free version as one of our Christmas guests has a nut allergy, then added the nuts and hazelnut meal. You will see many ingredients, choose the ones you like and adjust the mix if it's too dry or wet!
  • 2 cups Medjool Dates - pitted
  • ½ cup unsweetened shredded coconut + extra for rolling
  • 1 Tblspn Chocolate Pea Protein Powder
  • 1 Tblspn Vanilla Pea Protein Powder
  • 1 cup Hazelnut Meal (or use Almond Meal)
  • ½ cup dried Goji Berries
  • 4 tablspns Cocao Powder
  • ½ cup Macadamia Nuts (or any nut you prefer)
  • 2tblspns Chia Seeds
  • ½ cup Coconut Oil
  • ¼ tspn Pure Vanilla
  • ½ tblspn Raw honey
  • 2 tablspns of your favorite liqueur - I used Frangelico (you can leave this out if you prefer)
  1. Place date in a food processor to blend together
  2. Add all other ingredients from above list
  3. Shape into balls
  4. Roll in extra coconut
