Raw Coconut Cashew and Lemon Bars

These Raw Coconut Cashew and Lemon Bars are simple sugar free, dairy free, raw, guilt free, healthy bar to have as a sweet treat. You can eithe make your own coconut butter (much cheaper) or can pick some up from your local health food store or the health food isle in the supermarket. It's a simple process that you can make while preparing the base. Enjoy! Kevin likes this recipe even tho it's healthy. 🙂
  • Base
  • 1½ cups almond meal
  • 12 Medjool dates, pitted and chopped
  • ½ cup shredded coconut +extra for sprinkling
  • 2 tlbs coconut oil
  • dash of salt
  • Topping
  • 1 cup cashews, soaked at least 4 hours or overnight
  • juice of 1 lemon
  • 2 tbls coconut butter
  • 1 tbls coconut oil
  • 2 tbls raw honey
  • ½ tsp pure vanilla extract
  • Coconut Butter
  • 1 Cup Shredded coconut
  • 3 tbln water
  1. For the Coconut Butter
  2. Place shedded coconut and water in a food processor with cutting blade and mix until soft like the consistency of butter. this will take around 8-10 minutes depending on you processor
  3. For the Base
  4. Place almond meal, dates, shredded coconut, coconut oil and salt in food processor and pulse until the mixture forms a dough
  5. Line a baking sheet with parchment paper. Spread almond mixture over baking sheet, pressingly firmly with your hands to create a rectangle about ¼"- ½" thick
  6. Place into freezer while preparing the topping
  7. For the Topping
  8. Rinse processor and blend all remaining ingredients until smooth
  9. Pour cashew layer over almond crust and spread evenly
  10. Place in freezer for 1 hour then slice into bars
  11. Trying stopping at one!
  12. Cut into bars and store in the freezer
