Wild Caught Salmon, Cauliflower Mash and Greens

Wild caught salmon, mashed cauliflower and greens is simple but elegant & is an easy meal to prepare and cook that would also make a worthy dinner party main
  • 2 x Wild Caught Salmon Fillets (if possible)
  • Rice bran oil
  • ½ Cauliflower
  • Broccoli
  • Large knob butter
  • Large knob of low fat cream cheese
  • Splash of milk if needed
  • Asparagus spears
  • Himalayan Salt
  • Freshly ground pepper
  • 1 lemon
  1. Chop cauliflower and broccoli and cook in water until tender
  2. Chop or break the woody ends from the asparagus and pop on top of the cauli and broccoli 2 minutes at the end of the cooking time
  3. Heat a pan on high
  4. Rub salmon with a little oil, salt and pepper
  5. Cook for 2-3 minutes each side depending on thickness, salmon is best served medium to maintains it's tenderness and flavor
  6. Squeeze ½ lemon over the salmon in the pan just before serving
  7. While the salmon is cooking separate the greens from the cauliflower and keep warm
  8. Mash or puree cauliflower
  9. Add butter and cheese and whip
  10. Add salt and pepper to season
  11. Assemble mashed cauliflower, then salmon and greens
  12. Serve with ¼ lemon
  13. Enjoy!
